Dairy free Bircher Muesli
A dairy free diet has become a nutritional path taken by many for both ethical and health related reasons, and while it’s always good to eat consciously and mindfully it wouldn’t be much fun to miss out on many of the breakfast delights that bring us joy every morning - especially when that so called joy is the creation of Swiss physician and pioneer nutritionist Maximilian Bircher-Benner who changed the eating habits of the late 19th century.
With this in mind and a Bilbao Yoga Retreat on the horizon with at least one vegan and one dairy intolerant student in attendance I decided to try out a dairy free alternative to my all time favourite…
Organic Oats - allow 1 cup of oats per person.
Oranges - 1 per person
Apples - 1 per person
Dairy free yoghurt (try soya/coconut or almond yoghurt)
Almonds, pumpkin/sunflower seeds, goji berries
Cute glass pots to serve
1. Soak your oats overnight in freshly squeezed orange juice ensuring that the oats are fully covered - top with water if you´re short on oranges. Cover and leave overnight in the refrigerator.
2. In the morning add freshly grated apple, cinnamon, dairy free yogurt and mix-up into gloopy goodness.
3. Scoop your muesli into little jam jars to serve top with honey, crushed nuts, goji berries and nutmeg.
In one of these pots you’ve pretty much ticked nearly every daily nutritional need, perfect for busy bees who don´t want to burn out on the go.
