My beautiful, funny and sweet friends Leo & Sunil arrived from London today. It is so nice to have them here in Bilbao - we are going to do lots of beach bumming, wine tasting and dancing for sure!
But before we get the party started I thought we´d start with a spot of healthy living and so I´ve treated them to a taste of the Pumpkin & Green Bean curry that was a big hit on the Yoga Retreat.
If you fancy re-creating something as yummy as you would find in a Thai/health foodie place with very little calories, fat and no naughty ingredients then try this simple - very cheap and easy recipe: Enjoy!
3 tbsp of curry paste
2 sticks of cinnamon
1 tsp of coriander powder
1 tsp of turmeric powder
1 tsp of tamarind paste
1 tbsp of palm sugar (don´t worry about this if you can´t find any)
800 ml of coconut cream or milk
2 tbsp of dark soy sauce
juice of 2 limes
10 large chunks of pumpkin
1 large handful of green beans, ends trimmed
Firstly, fry the curry paste and after 2 mins add the spices and sugar. Cook for a further 2 minutes then add the tamarind, coconut cream or milk and soy sauce. Simmer the sauce on low heat for 10 minutes.
Add the pumpkin and poach it with a lid on for about 15 mins. During the last 5 minutes, add the beans and cook uncovered so it reduces the sauce. Finish with the lime juice and garnish with coriander.
